A High-Protein Spinach Feta Wrap for Busy Mornings

When you pull into the drive-through for your morning latte and that familiar spinach and feta wrap, it feels like part of a simple routine. It is quick, convenient, and it gets you on your way. The only downside is that it is surprisingly low in protein, which is why it rarely keeps you full for long. A morning meal needs a bit more protein if you want steady energy through the first part of your day.
This version keeps the same warm, savory flavor while adding more protein to help keep you satisfied through the morning. The combination of eggs, feta, spinach, and sundried tomatoes is balanced and flavorful, and the wrap comes together quickly with minimal prep.
High Protein Spinach, Feta and Sundried Tomato Wrap
Ingredients
- 2 eggs
- 1 egg white
- 1 teaspoon chopped chives
- Salt and pepper
- 1 high-protein or whole-grain tortilla
- 1 handful fresh spinach
- 2 tablespoons crumbled feta
- 1 to 2 tablespoons chopped sundried tomatoes
Instructions
- Whisk the eggs, egg white, chives, salt, and pepper.
- Cook the eggs until soft and just set.
- Warm the tortilla until flexible .
- Layer the spinach in the center and spoon the warm eggs on top.
- Add the feta and sundried tomatoes.
- Roll the tortilla tightly, folding in the sides to enclose the filling.
- Place the wrapped tortilla in a pan over medium heat and cook 1–2 minutes per side, pressing gently, until golden and crispy.
Protein Boost Notes
• Stir one or two tablespoons of cottage cheese into the warm eggs in the pan if you want even more protein. It melts into the mixture and stays warm.
• Adding an extra egg white increases the volume without changing the flavor.
