In today's article, I'll show you how to create a delicious and healthy Mediterranean-inspired dinner that celebrates quality ingredients, including wild-Alaskan salmon and organic produce, while embracing the principles of self-care and nourishment. Ingredients (serves 2):

For the Green Pea Puree:

• 1 cup fresh or frozen green peas
• 1 clove garlic, minced
• 2 tablespoons fresh mint leaves
• 1 tablespoon extra-virgin olive oil
• Salt and black pepper to taste

For the Bowls:

• 4 thin slices of radish for a crisp, refreshing bite (e.g., watermelon radish or daikon radish)
• 1 cup cooked multigrain quinoa
• 2 (6-ounce) salmon fillets, grilled or baked to your preference
• 4 asparagus spears, trimmed and halved
• Handful of pea shoot microgreens for garnish
• Lemon wedges, for serving

Instructions:

1. Start by preparing the Green Pea Puree. If using frozen peas, cook them according to the package instructions. If using fresh peas, blanch them in boiling water for 2-3 minutes, then drain. In a blender or food processor, combine the cooked peas, minced garlic, fresh mint leaves, extra-virgin olive oil, salt, and black pepper. Blend until smooth. Set aside.

2. Next, prepare the salmon. Season the salmon fillets with salt and pepper. Grill or bake them until they reach your desired level of doneness. This usually takes around 4 minutes per side for medium-rare. Once done, set the salmon aside.

3. Steam the asparagus spears until they are tender but still crisp, about 2-3 minutes. Set aside.

4. To assemble the bowl, start by spreading a generous spoonful of the Green Pea Puree at the bottom of each serving bowl.

5. Place 4 thin slices of crisp radish on top of the pea puree.

6. Add a layer of multigrain quinoa over the vegetable slices.

7. Carefully place a grilled or baked salmon fillet on top of the quinoa.

8. Top the salmon with the additional radish slices and the steamed asparagus spears.

9. Garnish the Mediterranean Salmon Bowl with pea shoot microgreens for a burst of freshness.
